Fix temporary workaround: remove 'excludes' from xmppserver build

Description

As not all artifacts used in the Maven setup are completely backwards compatible, some compilation has been disabled in the xmppserver POM. This has been done by excluding certain files in the configuration of various build plugins. These exceptions should be brought back to life.

The originally excluded classes were merely three:

  • MINAStatCollector.java (automagically solved with the MINA update)

  • org/jivesoftware/openfire/launcher/Launcher.java (solved with moving away from JDIC to java.awt.SystemTray)

  • org/jivesoftware/openfire/launcher/Uninstaller.java (still an issue, because i4runtime.jar is not in Maven Central, that's why I asked here)

So, yes, it's still an issue.
