The RPM installer is for Redhat based distro's - Debian, Ubuntu, etc. use https://www.igniterealtime.org/downloads/download-landing.jsp?file=openfire/openfire_4.3.0_all.deb

The problem does not exist in https://www.igniterealtime.org/downloadServlet?filename=openfire/openfire-4.3.0-1.x86_64.rpm (logging is fine with that installer)

This is a guess but in a number of places we specify "-Dlog4j.configurationFile=<some path>" - my suspicion is that this was missed from whatever file is used to startup Openfire on a Debian based system - possibly build/debian/openfire.init.d
There were a number of reports about Openfire not logging anything since 4.3.0 upgrade from 4.2.3 (using deb package). So far no reports from CentOS users. Seems to work fine on Windows.
